Simon: Most people use vegetable oils when they fry foods or put them on salads. We believe that we need them to prepare our food. But what many people don't know is that vegetable oils are not healthy. The producers separate the oil from vegetables, nuts, or seeds.
They can do that in two ways. One way is by heating up the produce and then squeezing out the oil. The other way is by using a mechanical process. The mechanical process is much slower than heating up the crop and yield less oil.
Refined vegetable oils start from seeds of various plants. There are many kinds of oils on the market. Some of the most common ones are canola or rapeseed oil, soybean, corn, sunflower, safflower, peanut oil, and much more.
When you separate the oil from the produce, you also remove the nutrients from the seeds. Refined oils are chemical products and are not healthy foods.
Vegetable oils are excessive fats that your body doesn't need. The body uses fats for energy storage when there's no food or energy source available. The body first uses its glycogen store, which comes from carbohydrates from plants.
And when that's depleted, it uses its fat storage. Every time you eat fatty foods the body stores it as fat and won't use that until its glycogen stores have been depleted.
So it means that the fat just stays there and doesn't do anything, and obesity is shown to cause diseases like cancer.
Cholesterol is part of many critical cellular functions in the body. The body produces all the cholesterol and fats it needs, and plants already contain enough essential fatty acids that we need.
But when we add too much dietary fat, we become overweight, and that can create more diseases. Some side effects include heart disease, cancer, and diabetes.
The most popular oils like canola, olive and flaxseed oil have low burning points. That means that high heat damages the oil and creates free radicals.
Free radicals are reactive and unstable molecules and are a byproduct of our metabolism. Exposure to toxins in the environment can also create them.
Free radicals are atoms or molecular fragments that have too much or too few electrons. When too much of them build up, they harm the cells of the body.
And because free radicals have one or more unpaired electrons, they become unstable, and then they try to find other electrons so that they can become a pair. Therefore, free radicals can destroy our health and weaken our body.
Another problem with vegetable oils is oxidation. It's a natural process where air reacts with compounds in vegetables or fruits and decomposes them. It's like nature's recycling.
Ordinary vegetables have fiber that protects the vegetable or fruits from too much oxidation. And when you separate the liquids from plants, you also expose the nutrients to oxygen.
Prolonged exposure to air deteriorates the vital enzymes and nutrients in juices and oils. So that means that when you extract oils from the plant, you also remove all the ingredients of the whole food. So oils have no longer the proteins, carbohydrates, vitamins, or minerals from the whole food.
The second that you create the oil, you might have some nutrients left. But the oxidation will eventually remove all these nutrients from the oil.
So what you get is a produce with no nutrients left and a lot of fat. Vegetable oils contain a lot of bad fats. So one is polyunsaturated fats. These fats oxidize easily through heat and light.
In ordinary plants, the amount of polyunsaturated fat is perfectly balanced. But when you eat vegetable oils, you concentrate polyunsaturated fats and other fats.
Oils only supply concentrated calories but nothing else from the plants. It's the most calorie-dense substance you can eat. Oils can clog arteries, which can lead to heart disease and cancer.
If you pour oil in your sink, you will eventually clog your pipes. And that's a major problem in the sewage system. Another bad fat in oils is trans fats. So you can find it in refined oils and margarine. Margarine is created by using vegetable oils.
Margarine can contain soybean oil, canola oil, sunflower oil, or other vegetable oils. Trans fats are human-made fatty acids formed during the process of hydrogenation.
Hydrogenation turns liquid vegetable oils into solid fats, and that's the reason why margarine is solid at higher temperatures.
Animal fat and hydrogenated oils are the biggest source of trans fats. Trans fats increase your risk of heart disease, sudden death, and diabetes.
And there are no safe limits on trans fats. The body cannot process these particles, and therefore, vegetable oils or animal products are not safe to eat.
Every time you eat refined oils, you increase your intake of trans fats. The safest way to avoid them is by eating a plant-based diet without any added oils.
So acrylamide in fries can lead to endometrial, ovarian, and lung cancer. It's not actually the fries themselves that are bad for our health. It's the vegetable oils that we use to cook them.
So later I will explain how to cook food without vegetable oils and still eat french fries if you want. So many of us have heard that we need to eat omega-3 from fish oil.
But fish oil is also a processed food and is unhealthy. While it contains some omega-3, it also has other unhealthy fats such as saturated fat.
Saturated fat can damage the arteries and cause heart disease and stroke. We don't need to get omega-3 from fish. Where do fish get their omega 3? From algae, which are plants.
If you want to get your daily dose of omega-3, you can take one to two tablespoons of ground flaxseed and add it to your food every day.
So now you might think that, oh, it's just refined vegetable oils that are bad for our health. But what about extra virgin olive oil or coconut oil?
They use mechanical processes to produce oil and they don't heat the produce and must therefore be healthier. But they are junk food as much as white sugar.
So why do we despise white sugar? It's because it contains a lot of empty calories. It only has carbohydrates but nothing else from the sugar plant.
So, the producers take the sugar cane or sugar beets and let them go into a long chemical process. And the end product is a bleached chemical junk food. There are no essential amino acids or fats, vitamins, minerals, or fiber.
But then you might think white sugar goes through a chemical process. If olive oil or coconut oil goes through a mechanical process, then it must be healthier than white sugar.
But even olive oil and coconut oil don't have that many nutrients left because of oxidation. The second you produce the oil, there might be some nutrients left. But supermarkets store their olive and coconut oil at room temperature for months or years before it gets sold.
By then, the oxidation has removed all the nutrients from the produce. If you want to store your food for a long time in a jar, you need to remove the oxygen. You can either do that by putting the jar in boiling water for a set amount of time.
Or you can use steam or pressure to also remove it. But when you put olive oil or coconut oil in a bottle you don't remove the oxygen, because otherwise you had to heat the oil at high temperatures to remove the oxygen.
So that means that you cannot bottle the olive or coconut oil without preventing oxidation. That means that all the nutrients will eventually disappear.
Cold-pressed olive oil or coconut oil contains as little or fewer nutrients as white sugar. Coconut oil or olive oil provide no protein, carbohydrates, vitamins, minerals, or fiber. So, in what way are they healthier than white sugar?
If you don't believe me, you can go to Chronometer. com It's a website where you can log the food that you're eating.
You can search for certain foods and look at the nutritional content and it also divides all foods into macronutrients such as fats, protein, or carbohydrates.
So I went to Chronometer to look at Bertolli organic extra virgin olive oil. And when I looked at the nutrients it contained tiny amounts of vitamin E, K, calcium, iron and some sodium. The rest of the oil was empty calories. I added one cup of olive oil and it contained 1, 900 calories.
When I compared it to a Big Mac meal with a big soda and French fries, I only got up to 1, 400 calories. That means that one cup of extra virgin olive oil contains more calories than a Big Mac menu.
Olive oil still contains some unhealthy saturated fat. Plants usually don't contain that much saturated fat. But when you concentrate the oil, you also concentrate the saturated fat.
So the higher amount of fat you have in your diet, the less effective your insulin becomes. Olive oil is like going from worse to bad. So it's a calorie dense liquid with no nutritional value. And if you don't believe me go to Chronometer. com and look it up.
So you might think that I just use some olive oil here and there to fry my food or add it to my salads. But even a few splashes of olive oil can become a lot of extra calories that you don't need. I have heard many people praise coconut oil as a healthy food.
But like all oils, coconut oil is pure fat. So many people use it for cooking or baking, and one benefit is it's high smoke point. You can also find coconut oil in soaps, cosmetics, hair gels, and skin moisturizers. And they are probably the only time when you should use coconut oil.
Coconut oil contains 90 percent saturated fat, and it's not much better than butter. It has the same negative effect on your cholesterol as eating butter.
Cholesterol created by your body is not bad and is essential. But when you add extra cholesterol from coconut oil or butter, you diminish your health.
The best way to get fats from your food is through whole plant foods like vegetables and fruits. You can also get it from nuts and seeds. But nuts and seeds can also contain a lot of fat and should only be consumed in tinier amounts.
If you eat a variety of natural foods, you will not become deficient in fat. Your body doesn't need that much fat to be healthy. So we don't need to take any extra fish oil, olive oil, or other vegetable oils when we can eat healthy foods.
Fats should come from whole foods such as vegetables and fruits and not oils. Plants also contain fiber, vitamins, minerals, and protein that is missing from oils.
If you like olive oil, eat olives. Instead of using flaxseed oil, buy flaxseeds and ground them and then use one to two tablespoons per day to get enough omega 3.
Even vegetables and fruits contain tiny amounts of fat and nature has created the exact amount of fat from vegetables and fruits for us to thrive. So it's difficult to be deficient in fats, and too many people get too much of them.
You can get all the fats that you need from whole plants, much like you can get all the protein you need from eating plants.
I have told several times on this podcast that when we eat vegetables, we reduce our cancer risk. But even a healthy plant-based diet can become unhealthy when we add vegetable oils.
The best way is to eat a whole-food, high-carb, low-fat diet. This means avoiding all animal products, including eggs and dairy, eating a lot of starchy vegetables, and then adding vegetables and fruits to that diet.
John McDougall is a doctor that is famous for making people lose weight. And he does that by making them eat starchy vegetables such as rice, potatoes and then adding vegetables on top of that.
And people have lost a lot of weight using his method. He has a famous saying that the fat you eat is the fat you wear. So the body will store the extra fat that you consume and will do nothing with it until there's a famine.
The body doesn't care if the fat comes from oils, animal products, or foods with a lot of fat such as avocado, nuts, or seeds. But avocado, nuts and seeds also has fibers and other components from a plant. And oils only has the fat.
Another question you might raise right now is, How are you supposed to cook your food without any oils? There are many ways to cook your food without using any fat. So one way is to fry your food with water or use a non-stick pan.
I always use water when I fry my vegetables. As long as you add more water when everything has evaporated, you will not burn your food.
And you can also use a non-stick pan to reduce that risk even more. But you should use a non-toxic ceramic coating or something similar.
Another way I have found to cook food is by using waterless cookware. It's a special technology where the cookware has a thick bottom with five different metals.
This technology uses the water in vegetables to cook the food. You start the cooking process at high temperature and that will create steam from the vegetables and when you reach 158 Fahrenheit or 70 Celsius, the steam will start to escape from the sides of the pan.
Then, you turn down the heat and are able to cook the food with steam from the vegetables. In that way you don't need to use any oil or pour excess water in your drain and will lose less nutrients that way.
You can also steam your vegetables instead of frying. You do it by filling the pot with water and let it boil and then adding vegetables to a steam basket.
Another technology you can use is a pressure cooker. So a pressure cooker is a sealed pot with a valve that controls the steam pressure inside.
It also functions like waterless cookware, but the water that you add inside becomes steam, which raises the pressure in the pot. There are two types of pressure cookers. One that you put on your stove and one that is electric.
Another way you can prepare your food without oil or fat is by putting it in the oven. Put the food on parchment paper and spray water on the vegetables to avoid burning.
If your baking needs oils, you can replace them with applesauce, vinegar, mashed bananas, potatoes, pumpkin, tomato sauce, or other things.
The final method I will talk about is an airfryer. It's a technology where you prepare your food using hot air. So it allows you to cook crispy golden fried food without using any oil.
An air fryer works like a convection oven where there is a fan that circulates hot air around food in a tray or basket.
The food becomes crispy on all sides without having to use hot oil.
In that way, you can make healthy french fries if you cut your potatoes yourself. You can buy french fries in the supermarket, but most contain oil.
So, if you want to be on the safe side, you can take some potatoes and, cut them, and then use the air fryer to create crispy french fries.
